At Wharf St. Distillery, our wine dinners are about more than just food and drink. They’re about connection — to the people who grow and craft the wines, to the flavours that come alive on the plate, and to the stories that bring it all together.
That’s why we’re so excited to announce our next event: the Mercer Wines Dinner on Thursday 11th September.
Why Mercer?
If there’s one winery our guests have asked for again and again, it’s Mercer. While it’s been a couple of years since Mercer Wines featured on our list, the requests have never stopped: “When are you doing a Mercer dinner?”
Now, we’re making it happen.
Founded by Aaron & Alison Mercer, Mercer Wines has built a reputation for vibrant, expressive wines that reflect both innovation and place. Aaron and his team believe in working with sustainable practices, minimal intervention, and what they call a “no rules” approach to winemaking — crafting wines that are fresh, fun, and seriously drinkable.
Or as they put it: “Wine is about enjoyment. We make wines that bring people together and put a smile on your face.”
Mercer Highlights
Here’s a taste of what makes Mercer so special:

Mercer Vermentino – Bursting with freshness, this wine sings with bright citrus, crisp green apple, and a touch of sea spray minerality. It’s the kind of white that just dances with seafood and summer fare.

Mercer Tempranillo – Vibrant and spicy, this red brims with juicy dark cherry, hints of plum, and a subtle savoury edge. Smooth tannins and a lively finish make it a natural match for Mediterranean flavours and share-style dining.

The Dinner
On the night, we’ll be pouring five premium Mercer wines, each matched with five creative, seasonal courses from our kitchen. Expect vibrant pairings designed to surprise and delight, with Alison Mercer joining us to share the stories and philosophy behind each pour.
And with this possibly being our final Wine Dinner of 2025, it feels like the perfect way to round out an incredible year of food, wine and connection.
